All of them are Sukkari in appearance and taste, but if Sukkari is fresh and in a semi-ripe state, it becomes soft, juicy, and melts in the mouth — this type is known as Sukkari Rutab. It is essential to store it in a freezer, as it prefers a cool environment; otherwise, it can spoil easily. Exporting Sukkari Rutab from Saudi Arabia to other countries is not easy, as it is delicate. Please note that spoilage doesn’t mean it will become infested with insects, but rather its color can turn black and it may develop an unpleasant odor. The buying and selling of this type are mostly observed during the month of Ramadan.
Now, if we talk about Sukkari Dry, it is essentially Sukkari Rutab with its moisture reduced to make it drier. This gives it a firm texture and makes it suitable for long-term storage — this is the Sukkari that is exported to countries like Pakistan.
